Pecan Snowball Cookies

Ingredients
  • 1 cup all-purpose or cake flour pecan-snowball-cookies
  • 1 1/2 cups pecans, finely chopped
  • 2-3 Tbsp sugar
  • 1 teaspoon vanilla extract
  • 1/4 pound butter (at room temperature)
  • Pinch of salt
  • Powdered sugar, to coat (about 1 cup)
Method
1 Preheat the oven to 300°F and prepare a large cookie sheet.
2 Mix all the dry ingredients (flour, walnuts, salt, sugar) in a large bowl. Add the vanilla extract. Add the butter in little pieces, and combine everything together with your (clean!) hands until the mixture looks like a coarse meal with nut bits in it. Form the dough into small balls no larger than a walnut and place on the cookie sheet, spaced at least an inch apart from each other.
3 Bake for 35 minutes. When they are still warm, but cool enough to touch, roll the cookies in some powdered sugar. Set aside on a rack to cool completely. When cool, dust again in powdered sugar.
Makes about 20 cookies.

Eggnog Custard Pie

Willy ran across a recipe and asked Mrs Willy to cook it. It sounded like a good custard pie with a twist. It had rum and eggnog in it. Willy ain't much on the alcohol but has no problem when it is for flavor in a good recipe. Eggnog at this time of the year however is one of Willy's favorites.

Well, she cooked it and Willy ate it and it was good ---- try it out!

1 prepared pie crust

FILLING:

2 c. eggnog
3 eggs
2 tbsp. brandy or rum
1 tsp. vanilla
1/3 c. sugar
1/8 tsp. salt
1/8 to 1/4 tsp. nutmeg, freshly ground preferred

TOPPING:

1 c. whipping cream
3 tbsp. powdered sugar
1 to 2 tsp. brandy or rum or substitute extract, 2 drops

Heat oven to 450 degrees. Prepare pie crust according to directions. Do not prick crust. Partially bake crust at 450 degrees for 5 minutes. If crust puffs, gently press back to bottom and sides of pan. Reduce to 350 degrees.

In large bowl, beat eggnog, 3 eggs, brandy and vanilla. Add sugar, salt and nutmeg, mix well. Pour into partially baked pie crust. Cover with foil and bake at 350 degrees for 25 minutes. Remove foil and continue baking for 30 to 40 minutes or until knife inserted in center comes out clean.

In small bowl, beat whipping cream until soft peaks form. Add powdered sugar and brandy, beat until stiff peaks form. Garnish pie with whipped cream and sprinkle with nutmeg. Refrigerate any remaining pie. 6 to 8 servings.

Willy's Vanilla-Almond Fruit Tart with Kiwi

Willy likes to cook up something a little fancy every now and then. This little recipe caught Willy's eye. See if you might like it.

What You Need!
1/2 cup PLANTERS Sliced Almonds, toasted, divided
50 NILLA Wafers, finely crushed (about 1-3/4 cups)
6 Tbsp. butter, melted
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
1 cup thawed COOL WHIP Whipped Topping
1 cup mixed fresh fruit (blueberries, raspberries, blackberries, halved strawberries, sliced kiwi)

Cocoons - Must Be Hillbilly

Willy is all about sweets and things that Willy doesn't need. A recipe that came to Willy's attention recently sounds really good and Willy believes that he needs to try this one real soon. Check this one out for some good eats.

1 stick Butter
2 T Powdered Sugar
1 tsp vanilla
1 C flour
1 C Pecans, Chopped

Cream butter, sugar, vanilla and flour (batter will be stiff) Add chopped pecans and make into balls. Place on greased cookie sheet. Bake in slow oven 45 to 60 minutes at 250 degrees, until light brown. While balls are warm, roll into powdered sugar.

Make up your own jokes.

Chocolate No BakeCookies

Willy made some great cookies last night for Willy and Mrs Willy. These are some of Willy's Favorite - Easy cookies. -- Also More on Cookies in another post or two.

These cookies consist basically of putting sugar, butter, cocoa and milk in a pan and boiling for 2 minutes. Then add peanut butter, oatmeal and vanilla. Mix and drop. - Great Cookies.

2 C Sugar
2 T Cocoa
1 Stick Margarine
1/2 C Milk
1/2 C Crunchy Peanut Butter
3 C Oatmeal
1 tsp vanilla

Willy actually cuts recipe in half.

Chocolate No Bake cookies.

This is one the Willy likes Mrs Willy to fix for a quick chocolate fix. Just finished a batch - I made em and they were good.

2 C Sugar
3T Cocoa
1 Stick Margarine or Butter
1/2 Cup Milk
1/2 C Crunchy Peanut Butter
3 C Oatmeal
1 tsp vanilla.

Mix 1st 4 ingredients an boil for 2 minutes. Take from stove and add next 3 ingredients. Mix Well. Drop by spoonfuls onto waxed paper - Cool - Eat Enjoy

Fried Catfish

Willy knows that fried catfish is a southern delicacy. Willy also knows that many will argue about the best way to fry catfish. Will, Willy believes that simple is the best and Willy uses the following as a good easy catfish frying recipe.

Catfish, cut into strips
Salt
Pepper
Accent
Cayenne pepper
1 egg, beaten
Self rising flour or cornmeal
Oil for frying
Season catfish with salt, pepper, accent and cayenne pepper (if desired). Dip strips into beaten egg and dredge in flour or cornmeal. Deep fry for 5 to 8 minutes and drain oil off strips.

Grilled Spice-Rubbed Vidalia Onions

Willy is usually into lots of BBQ or fried food. However, Willy ran into this recipe for Vidalia onions that are excellent and kind of crispy but have never seen the deep fryer. - Try this one out - You will like it.10-4 Willy-------------------




Ingredients

2 tablespoons paprika
1 tablespoon ancho chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon kosher salt
1 teaspoon coarsely ground black pepper
1/2 to 1 teaspoon cayenne pepper
1 teaspoon dry mustard
1 teaspoon dried oregano
4 Vidalia onions, cut into 1/4-inch thick slices
1/4 cup canola oil


Instructions
1. Heat the grill to medium-high.
2. Whisk all the seasonings together in a small bowl.
3. Brush onion slices on both sides with oil. Rub one side of each slice with seasoning mixture and place rub side down on grill. (You'll have some spice rub leftover.) Grill until golden brown and a crust has formed, 2 to 3 minutes. Flip and continue grilling until just thoroughly cooked, 2 to 3 minutes longer. Serve hot or at room temperature. Serves 6.

Peanut Butter and Chocolate Pinwheels


Willy is still stuck on the Holidays and wants to make sweets. Willy has used this recipe in the past and it gets good results and looks good too. Try out these cookies and you will like them too.

Ingredients


1 18-ounce roll refrigerated peanut butter cookie dough
1/4 cup all-purpose flour
1 18-ounce roll refrigerated sugar cookie dough
1/4 cup unsweetened cocoa powder
1/2 cup finely chopped peanuts (optional)
Peanut Butter and Chocolate Pinwheels

Directions:
1. In a large mixing bowl combine peanut butter cookie dough and flour; use a wooden spoon to mix well. Divide dough in half.

2. In another large mixing bowl combine sugar cookie dough and cocoa powder; use another wooden spoon to mix well. Divide dough in half.

3. Between pieces of waxed paper, roll out half of the peanut butter dough and half of the sugar cookie dough into 12x6-inch rectangles. Remove the top pieces of waxed paper. Invert one rectangle on top of the other; press down gently to seal. Remove top piece of waxed paper. Tightly roll up into a spiral, starting from a long side. Repeat with remaining dough portions.

4. If desired, sprinkle half of the peanuts onto waxed paper. Roll 1 log of dough in peanuts. Wrap in waxed paper or plastic wrap. Repeat with remaining dough and peanuts, if desired. Wrap and chill dough logs 1 hour or until firm enough to slice.

5. Using a sharp knife, cut dough logs into 1/4-inch-thick slices. Place slices 2 inches apart on an ungreased cookie sheet.

6. Bake in a 375 degree F oven for 8 to 10 minutes or until edges are firm. Transfer cookies to a wire rack; cool. Makes about 60 cookies.

Make-Ahead Tip: Shape logs of dough; wrap and chill up to 1 week or freeze up to 1 month. Thaw frozen dough 3 hours in refrigerator before slicing.

Brickle

AT THIS TIME OF THE YEAR WILLY'S THOUGHTS TURN TO SWEETS AND CANDY. WILLY CAN HARDLY PASS UP ANY CANDY GOOD OR BAD. THIS IS SOME CANDY THE MRS WILLY MAKES EACH YEAR AROUND CHRISTMAS FOR PARTIES AND TO PUT IN DISHES TO GIVE AS GIFTS FROM HER KITCHEN. THIS STUFF IS REALLY GOOD AND HAS THE HILLBILLY WILLY SEAL OF APPROVAL.

Quantity Ingredient

1 Pkg White Almond Bark
2 Cups Rice Crispies
2 Cups Peanut Butter Captain Crunch
2 Cups Pecans - slightly toasted in oven

Melt Almond bark in Microwave in large bowl. Stir in Rice Crispies, Captain Crunch and Pecans. Line Jelly Roll pan with wax paper and spread thin layer of mixture in pan. Let set until hardened. Break up into pieces.

Note: Makes great Christmas candy by using the Christmas Rice Crispies which are red and white.

Dangerous Chocolate Chip Cookies

Willy loves chocolate chip cookies and ran into this recipe at Day Recipe.


Thanks to them here is a great chocolate Chip recipe

INGREDIENTS

1 cup butter or margarine
1 cup white sugar
1 cup brown sugar
2 3/4 cups flour
2 eggs
4 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon salt
2 cups chocolate chips
DIRECTIONS

Cream together sugars and butter.
Add eggs, vanilla and mix well.
Add dry ingredients to the butter mixture except the chips and mix until well combined.
Add chocolate chips and mix just until incorporated.
Bake at 350 for approximately 10 minutes (ovens vary). Cookies should be browned around the edges but not set in the center. Let cool and when hardened remove from pan.
If you desire a thinner cookie use less flour, if you prefer a denser cookie simply increase the flour by 1/4 cup.

Whats Cooking -Amazing Coconut Pie -

I personally love coconut pie. Therefore, you may find several versions of a coconut pie recipe on this site. I found this one on a favorite recipe website. Try it out - has to be good.


I have always loved this pie when my mom made it. If you like coconut, you'll like this pie. And it is soooo easy to make. If you want an easy, five minute dessert, this is perfect. It's basically a custard coconut pie. It tastes great warm or cold. There is no one specific memory that stands out with this recipe but I always remember feeling special when mom made this one. Maybe it was because not everyone in my family liked coconut so when mom made this dessert it felt like a special treat for those of us that did like coconut. Whatever the reason, this is still one of my favorite special treats for myself to this day.

2 cups milk
3/4 cup sugar
1/2 cup biscuit mix
4 eggs
1/4 cup butter
1 1/2 teaspoons vanilla
1 cup coconut



Combine milk, sugar, biscuit mix, eggs, butter, and vanilla in a large bowl. Mix with an electric blender on low speed for 3 minutes. Pour into a greased 9-inch pie pan. Let stand about 5 minutes and then sprinkle on the coconut. Bake at 350 degrees for 40 minutes. Serve warm or cool. Refrigerate leftovers (if you have any!).
