Glass Tile Store is Great for Willy's Tile.

Cooking with Willy is all about what is Cooking whether it is in the kitchen or somewhere else.  Today it is about the home and how the home and other places can be enhanced with great   tiles.
 Yes, I am talking about the wonderful look of tile that make Willy's kitchen look good and that makes Willy proud to prance around the kitchen creating his famous recipes.  Well, that is all well and good but what if willy has to take a bathroom break.

Grilled Southwest Steaks with Sunset Salad

Ingredients

  1. 2 beef eye round steaks, cut 1 inch thick (8 ounces each)
    Marinade:
  1. 1/3 cup fresh lime juice
  2. 2 teaspoons ground cumin
  3. 2 teaspoons steak seasoning blend
  4. 2 teaspoons finely chopped chipotle peppers in adobo sauce
    Sunset Salad:
  1. 2 small ears corn, husked
  2. 2 large yellow, orange and/or red bell peppers, cut lengthwise in half
  3. 1 medium tomato, chopped
  4. 1 tablespoon olive oil

Instructions

1. Combine Marinade ingredients in small bowl. Cover and refrigerate 2 tablespoons for Sunset Salad. Place beef steaks and remaining marinade in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
2. Place corn and bell peppers on grid over medium, ash-covered coals; grill peppers, uncovered, 15 to 20 minutes (over medium heat on preheated gas grill, covered, 15 to 20 minutes) and corn 20 to 25 minutes (over medium heat on preheated gas grill, covered, 20 to 25 minutes) or until tender, turning occasionally. Remove; set aside to cool slightly.
3. Add 3 to 4 additional briquettes to each side of fire grate to maintain medium heat, if necessary. Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, uncovered, 19 to 23 minutes (over medium heat on preheated gas grill, covered, 17 to 19 minutes) for medium rare (145°F) doneness, turning occasionally.
4. Meanwhile, to prepare Sunset Salad, chop bell peppers and cut corn kernels from cobs; place in medium bowl. Add tomato. Whisk reserved marinade and oil in small bowl until blended. Pour over vegetables; toss to coat.
5. Carve steaks into thin slices. Serve with salad.

ACAPULCO CHICKEN (EN ESCABECHE)


2 cups Unsalted chicken broth -- defatted
1 tablespoon Olive oil
2 teaspoons Ground cumin
2 tablespoons Pickling spice
1/2 Red bell pepper -- sliced
1 pound Boneless chicken breast -- halves
1/2 Yellow bell pepper -- sliced
2 tablespoons Minced jalapeno chili with -- seeds
1 Onion, halved -- thinly sliced
1/3 cup Rice wine vinegar
1/4 cup Fresh cilantro leaves
3 large Garlic cloves -- minced
baked (no oil) tortilla chips

  • Boil broth and pickling spice in heavy large saucepan ten minutes.
  • Strain and return liquid to saucepan. Add chicken, onion, vinegar,garlic, oil and cumin to pan. Simmer over very low heat until chicken is just cooked through, about ten minutes. 
  • Transfer chicken and onions to shallow dish. Top with bell peppers and minced chilli. Boil cooking liquid until reduced to 2/3 c, about ten minutes. 
  • Pour liquid over chicken and let cool 30 minutes. 
  • Add cilantro to chicken mixture.
  • Cover and refrigerate until well chilled, turning chicken occasionally, about 4 hours (can be prepared one day ahead). 
  • Slice chicken and transfer to plates. 
  • Top with marinated vegetables and some of the juices. Pass tortilla chips to use as "pushers." .

Hillbilly Wok

Willy wants a Hillbilly Wok or a cowboy wok or a mexican wok to cook on.  This is a large disc blade for a farm implement.  It is concave and makes a great cooker if you put handles on it.

It can be used for stir frying outside, cooking fajitas, cooking hot dogs or deep frying fish.  This is something that Willy wants.

Work Gloves

Willy knows work gloves.   Willy knows how to work with his hands on manual labor.  This means that there are times that if Willy does not wear the right gloves it is devastating to his hands.

What has happened in the past is that Willy will be digging post holes with a manual pair of post hole diggers without his excellent padded work gloves and guess what happens.  Willy suddenly realizes that he has a blister forming.  It is too late and the blister is there.  Willy's hands are ruined.

Well, the same thing happens and Willy has the right gloves on and no blister happens.

What is the point?  The right glove for the right job is important.  Check it out.

Cooking in the Heat

Willy thinks this summer is hot.  Willy wants to know what you cook when it is hot.

Proxy 2 - Great Computer Remote Access!

Remote Access to someone else's computer is something that is cooking this week.  Why is this important you ask.  Well, Willy has worked as an Technology manager and one of the hardest things to do is to lead someone through steps that are some times needed to be done to their computers.

People are always wanting to click ahead of what you tell them or wander off doing their own thing.  Well, when you take control of their computer with Remote Access you can get a job done more quickly and with less distress for both you and the end user.  This makes the job more enjoyable for the person needing to take control and less stressful for the person being helped.

Willy is no longer a manager of technology but Willy does help some people out on a limited basis with their computer problems.  Willy sees that the use of  Remote Access  to someones computer would be an excellent way of completing the task quicker and easier.

Well, lets talk about another use of the Remote Access
 that could be very useful.  Lets assume that you are at work and you need to do something on your home computer.  Could this be used for that.   Just another thought.

This is really good 256 bit encryption software that can allow you access through the internet for the purpose of remote troubleshooting, file access or possibly even team collaboration on certain projects.  Is this something for you.  Only you can tell.

Melted Onions

 Willy is a great fan of Weber Grills.  Grilling with charcoal is a great way to cook.  Willy for convenience sake uses gas grill but nothing tastes better than to cook on charcoal.  Willy thank Weber.com for this recipe and for giving Willy ideas to modify certain recipes to Willy's liking.  Willy hopes you like this.  10-4 Willy

6 medium yellow onions (skin on), 8 to 10 ounces each, about the size of a tennis ball
1/4 cup (1/2 stick) unsalted butter
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 teaspoon sherry vinegar
1 tablespoon minced fresh Italian parsley leaves

1. Fill a chimney starter to the rim with charcoal and burn the charcoal until it is lightly covered with ash. Spread the charcoal in a tightly packed, single layer across one-half of the charcoal grate. Put the cooking grate in place and let the coals burn down to medium heat (350° to 450°F). Leave all the vents open.

2. With the onions still in their skins, place them on the charcoal grate on or against the charcoal. Close the lid and cook the onions until very tender, 1 to 1-1/2 hours. Occasionally swap the positions of the onions for even cooking and turn the blackened skins away from the charcoal. When very tender, the onions will be blackened in spots all over and a knife blade will slide in and out of each onion like it is a ripe peach. Some onions make take longer than others.

3. At this point, to finish cooking the onions, you will need to add more charcoal to the fire for medium heat.

4. Remove the onions from the grill and let cool completely. Carefully remove the skin from each onion, being careful to leave the root ends in tact so they hold the layers of the onions together. Cut each onion lengthwise through the stem and root ends.

5. When the fire is ready, put the cooking grate in place. In a large disposable foil pan over direct medium heat, carefully add the onions in a single layer, add the butter, and season with the salt and pepper.

6. Slide the pan over indirect medium heat and cook, with the lid closed as much as possible, until the onions are very tender and just beginning to brown, 10 to 15 minutes, carefully turning the onions once or twice. If desired, to keep the onions warm, cover the pan with foil and let the onions continue to cook over indirect heat for as long as 30 minutes. Using barbecue mitts, remove the pan from the grill. Splash the vinegar and sprinkle the parsley over the onions. Serve warm.

Dental Website Design is Important To Willy

 Willy's site is about cooking.  However, along with cooking comes eating.  Along with eating comes the fact that Willy has to show his teeth to people when he eats and when he smiles.  This all leads to the fact that outside of popular opinion, Rednecks such as Willy want their teeth to look good.

Yes, Willy looks at websites and Willy knows that how a website looks is important.  Why would it be important for a dental website to have good design.  Well, the reason would be so that people like Willy will interact with the site and respond to the reason for the site.  If Willy is looking for a dental website and when willy gets to that site it must reach out and grab Willy.

If your dental website is such it has about 3 seconds to make Willy interact.  That means good design is important.  If it does not grab the person looking in 3 seconds then they are out of there and your chance to grab the audience is lost.

What is a Sad Cake

Willy had company come this weekend and they brought some food.  They brought some excellent brisket, nice strawberries and a SAD CAKE.

Willy was not familiar with sad cake but thought it tasted pretty good.  When asked why it was sad willy was told that it was because it rises and then falls.  Big deal - but I guess that is why the name.

To Willy it tasted a lot like a blond brownie.  It had chocolate chips, coconut, brown sugar and flour and something else.  Just a brownie - but it did taste good.

Functional And Stylish Watches for Willy!

Willy would like to be a famous cook like all of these folks on the Food Network on TV.  Willy tries to cook good and Willy tries to have great recipes and to have great style and presentation on all of his dishes.  However, Willy has been watching closely and one of the places that I am failing is in style.

I have recently noticed that many of these cooks are wearing some type of fancy, cool watch such as a jacques lemans watch   This is probably the reason that Willy is not famous.  Willy does not look cool enough.  So Willy questions himself as to how he can become cool like these cooks and probably land that great network cooking deal.  Well, Willy goes to the World Wide Web and finds a site like bluedial.com that has all kinds of cool watches. 

Willy began to search this site which was very easy to navigate and found that it appears that they have a great variety of great and cool watches along with a mighty selection of very practical watches for almost every type, style and design that a person might want. 

So, now Willy knows that whether he wants that cool watch to help Willy launch his network career or if Willy wants a watch to scuba dive in or if Willy wants a watch just to work in, then these are available and easy to find.  They are well priced and easy to find.

Summer and Home Made Ice Cream

Summer is designed for Hamburgers, Hot Dogs and Home Made Ice Cream.

Especially Mrs. Willy's home made ice cream.  She makes great ice cream.  She is famous for her award winning vanilla.  County fair many years ago she went up against many exotic flavors of ice cream and won first with her vanilla.  Made lots of people aggravated.

However, she most of the time crunches up butterfinger candy bars and mixes into her vanilla and it is always a hit also.

Willy loves ice cream and summer is an excuse to eat more than he should

Gourmet Hot Dogs

Willy believes summer time is time for Gourmet Hot Dogs.

What is a gourmet hot dog you ask Willy! 
Well, Willy says that you take a premium all beef wiener. 
You take that wiener and grill it over charcoal.  This gives a great flavor.
Take and grill a good brand of hot dog bun slightly on the grill.
Put a premium yellow mustard or your favorite mayo or both on the bun.
Spread some sweet pickle relish on the bun to cover the entire bun slightly.
Place the wiener on the bun.
Put on your favorite heated Chili.
Put on some great sweet vidalia onions - chopped fine.

Enjoy.

Willy Cleans with Cook Top Cleaner - Great

The smooth flat top stoves that we have today are very neat and are Willy believes they are about the best thing that has been invented over the years in cooking innovations.  Willy moved into a new house about three years ago and with that move Willy's cooking began on a new stove with this type of surface.

What Willy found out real soon was that as great as these tops are to cook on, they are also brutal to clean when Willy has a spill as Willy does quite often.  These tops are beautiful when clean but not so nice looking if you let the burnt on stuff accumulated at all.

That is when a good cook top cleaner comes in handy.  What was great was that with Willy's new stove when he moved into this new house was a sample bottle of  Weiman Glass Cook Stove Cleaner.  Thankfully this product is great in keeping the smooth ceramic stove top clean.  Willy, and most of the time Willy's wife,  uses this cleaner simply and easily about every third time that the stove top is cleaned and because of this the beautiful black ceramic/glass oven top stays beautiful and keeps its great, slick, like new shiny appearance.

So, what Willy is saying is even though this type of oven top is great looking, it also takes great products like Weiman's products to keep it in great shape.

Willy's Grouper Experiment

Willy likes pan seared grouper at a local restaurant.   Therefore, Willy decides that he will buy some grouper and try to duplicate the dish.

Well, Willy seasons up the grouper and puts it in a pan of grease to fry.  Willy fries about 4 minutes on each side.  Then Willy takes the fish out of the pan and gets rid of most of the grease.  Willy then sears the grouper in the pan on both sides.  Looks pretty good.

Willy eats on the fis but clearly believes it is just not real good.

Willy will leave the cooking of the grouper to the restaurant. 

Bring Willy some fried catfish please.

Pimiento Cheese with Pecans

Wife tried a new recipe this weekend.  She basically took a simple Pimiento Cheese recipe and added Pecans to it.

We took it with us for sandwiches but odd thing is that we used it mostly as a dip with potato chips and corn chips.  By the way we were fishing and caught about 5 eatable trout.  Plan on cooking those in the next week. 

Willy will let you know how the trout are cooked and how they come out.

Willy's Weekend Food.

Willy had an uneventful weekend.  Started Early with Friday off and Willy played 9 holes of golf and mowed the yard and did some odds and ends.   Friday afternoon Willy put on a Pork butt with Neely Rub on it.  Willy cooked it until late Friday night.  Put it in the fridge and Saturday morning Willy chopped it up real fine.

This was then sprinkled with a seasoning that was given to Willy by the Mean Pig in Cabot, Arkansas.  This tablespoon of seasoning mixed in a chopped pork butt makes all of the difference in taste.   Willy ate on this pork with some bbq sauce and coleslaw mixed in on Sunday evening.  This gets eaten with good Lays Potato Chips - Ruffles.  Great easy meal.

Saturday Willy ran around with wife, ate Chinese food for lunch and then snacked for Supper.  Sunday lunch was simple rotisserie chicken from Kroger, open can of pork and beans, and some deli potato salad.

Eating simple and making life easy is really great and that is what is Cooking with Willy

Coconut Catfish with Lime Sauce

Sometimes Willy sees a recipe that sounds real good and turns out ok but is not considered a keeper.  It may be that the recipe includes catfish which Willy loves.  However, Willy has tried catfish many ways but the only real way the Willy likes catfish is fried.  Good old Southern Fried Catfish.  It can't be beat.

Here is the recipe that Willy tried and would recommend if you like the coconut stuff - but Willy will not go to trouble again.  Here it is.

Take catfish fillets and dip in coconut milk and then roll in dried coconut flakes.  Wow - looks pretty.  Put on a pan and grill for 15 minutes at 350 degrees.

Make a sauce consisting of

juice of 3 limes
1/2 cup chicken stock
1/2 tsp salt
2 tbsp sugar
2 tbsp cornstarch.

Boil the first four ingredients and then add cornstarch to thicken as desired.

Drizzle the sauce lightly over the fish and eat.

Willy is cooking up an idea that says that everyone needs to enhance and protect eheir pickup truck cargo box with a bakflp truck bed cover.  What is this you ask?  Well the bakflip tonneau cover is a hard tonneau cover with a folding design. It comes in 4 models; Bakflip G2, Bakflip HD, bakflip f1and Bakflip CS.

Willy finds that this is available for most pickups and that bakflip offers truck owners security and head turning looks. The folding design makes it very easy to use, not to mention very practical. Installation is easy with the provided clamps and you are sure to increase your fuel mileage.

Good looks, better gas mileage and all the girls look at Willy's truck.

Willy's Fried Tater Cakes

Willy cooks simple things some time and messes them up. Last night Willy was going to fry a simple potato cake. Willy's mother used to cook them anytime there was left over mashed potatoes from Sunday's lunch. That meant just about every Monday there were Tater cakes on the table.

Willy's problem is that he left out the flour. Cakes fried more like scrambled eggs than cakes. Nothing to hold them together.

Here is how it is supposed to be done. 10-4 Willy

Willy's Fried Tater Cakes

2 c. leftover mashed potatoes
1 egg, beaten
1/4 c. flour

Stir beaten egg and flour into potatoes. Form into patties. Dip both sides into additional flour and brown in a little shortening. A good variation is to add some chopped or ground ham to the mixture. Makes 4-8 servings.

Poor Man's Lobster

Another great Recipe that Willy is going to try.  Check it out.

10-4  Willy.

2 lbs fish fillets cut into 2 inch squares (northern or walleye is best)
1 cup water
1 cup dry white wine
two bay leaves
one small onion sliced
6 lemon slices

Put everything except fish in a pan and heat until simmering, put fish in simmer for about 10 minutes. cool slightly and serve with melted garlic or lemon butter.
