Self rising flour or cornmeal
Oil for frying

Oil for frying
Season catfish with salt, pepper, accent and cayenne pepper (if desired). Dip strips into beaten egg and dredge in flour or cornmeal. Deep fry for 5 to 8 minutes and drain oil off strips.

Willy is right! Simple is best when it comes to fried catfish. Adding the cayenne pepper here is a nice touch, too.
By the way, anyone who uses tartar sauce on wonderful, wonderful cat fish instead of lemon as God intended is an unwashed heathen.
