Wasabi and Twice Cooked Baked Potatoes

Willy likes to cook and Willy sometimes finds an old recipe with a new twist.  This one takes Twice Cooked  Baked potatoes and adds Wasabi.  Willy was not even sure what Wasabi was.  Check out this recipe and tell old Willy what you think.  Done on the Grill - nice twist.  10-4 Willy

4 russet potatoes, each 8 to 10 ounces, washed and halved lengthwise
Vegetable oil
3/4 cup sour cream
1-1/2 cups shredded Monterey Jack cheese, about 3 ounces, divided
2 teaspoons Dijon mustard
1 teaspoon wasabi paste
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

1. Prepare the grill for direct and indirect cooking over medium heat (350° to 450°F).

2. Lightly coat the potato halves with oil. Brush the cooking grates clean. Grill the potatoes over direct medium heat, with the lid closed as much as possible, until a fork slides in and out easily, 30 to 40 minutes, turning three or four times. If the potatoes begin to turn darker than golden brown, finish cooking them over indirect heat. Remove from the grill and let cool slightly.

3. When cool enough to handle, use a small sharp knife or the edge of a spoon to cut around the cut side of the potato to within 1/4 inch of the skin. Scrape off and discard any charred sections of potato. Using a spoon, scoop out the interior of the potato, leaving a shell about 1/4 inch thick attached to the skin. Place the potato pulp in a large bowl. Set the potato shells aside while preparing the stuffing.

4. Using a potato masher or the back of a fork, mash the potato pulp in the bowl. Add the sour cream and mix well. Stir in half of the cheese and all of the remaining ingredients. Taste the potato mixture and, if desired, add more wasabi, salt, and pepper. Spoon the potato mixture into the shells, mounding it slightly. Sprinkle the remaining cheese over the tops of the potatoes.

5. Grill the stuffed potatoes over indirect medium heat until the cheese is melted and the potatoes are heated through, 10 to 15 minutes. Serve immediately.

Get a Cheap Seat!

Some people are always asking Willy what he does when he is not cooking.  Well, the answer to that could be that Willy likes to attend concerts and if he could he would try to attend every concert that he could all over the world.  Wow, that would cost lots of money you would say and Willy would answer, Yes Sir that is correct.

Well, lets see what are the concerts that Willy has already been to.  The one that Willy has been to the most and has always thought about getting again are George Strait Tickets.  Willy always wants the best tickets and best seats he can get for that.  Wow, it is important to try to find a cheap seat.  Well the next great thing is that Willy would want to get Rascal Flatts Tickets.  That would be something to have those tickets and a great steak.  Wonder if Willy could find a cheap seat to that concert.

Well, would Willy want Backstreet Boys Tickets or Celine Dion Tickets or maybe even a  Linkin Park Ticket?  Probably not.  Willy will just stick to country.  However, a cheapseat to any of these would be great.  What do you think?

Saturday Cooking

What is cooking up this Saturday with Willy?  Well, Willy is torn between choices today.  There are many things going on and Willy wants to do them all.

  • Crappie fishing close to home - Crappie season is coming on in the area lakes and Willy is enjoying getting into that.   Not catching much so far but enjoying it.



  • There is a PBR bull riding in the City tonight and Mrs Willy would kind of like to go and Willy would love to do that with her.







  • Kids are going about lunch to the Little Red River to trout fish and maybe just hang out.  - Willy loves to do stuff with the Daughter and Son in law.  


What to do.  What to Do.  Willy is formulating a plan!

Willy Takes a Shakey Cooking Course.

Willy likes to cook and Willy finds that he cooks at all times of the day and night, depending on when the mood strikes.   This means that Willy could have  been cooking at 5:00 am this morning when the big earthquake struck the area.  Yes, they say that there was a 4.7 earthquake here in Central Arkansas about that time.

This makes Willy believe that he should take a cooking course that allows Willy to learn how to keep the pot on the stove when the earth shakes.  Willy needs to know what the boiling point of water is when the earth is shaking.   Willy needs to know if he is scrambling eggs and the earth shakes, does this over scramble the eggs.

Willy is concerned.  If there is a cake in the oven and the earth shakes will Willy's cake fall.  Willy needs to know if there is a fried egg being cooked will it suddenly become scrambled.

Wow, all of these questions makes Willy get on the internet and try to find that Shaky Cooking Course.

The wife woke up singing.  I feel the Earth Moving Under My Feet.

Ceiling Fan Day at Hansen Wholesale!

Willy likes to cook and often it is very hot and muggy in the house. Diets

Willy is getting too fat and Willy is trying to diet to lose weight.  The diet includes protein and some type of potatoes or rice in the morning.   Snacks in morning and afternoon of protein and fruit and then evening meal of protein, vegetables and rice or potatoes.

What Willy believes makes this diet work is that Willy only gets very small portions each time.  The combinations of foods is supposed to be the secret, but Willy knows when you don't stick much in your mouth, you might lose weight.  

By the way - has anybody got some ice cream?

Armadillo eggs

Willy has seen several versions of these and thinks this one is worth trying. Have not used the cilantro before. Try them and tell Willy how you like them.

Ingredients:
4 ounces cream cheese, room temperature
1/4 cup yellow cheddar cheese, shredded (2 ounces)
1 clove garlic, minced
1 teaspoon chopped cilantro
1/4 teaspoon ground cumin
Salt to taste
6 medium-sized jalapeños
2 pounds breakfast sausage or any other spicy uncooked sausage, removed from its casing

Method:
Preheat the oven to 375 and lightly grease a baking sheet.

Mix together the cream cheese, cheddar cheese, garlic, cilantro and cumin until well blended. Taste and add salt, and adjust seasonings.

Remove the stems from the jalapeños and cut in half lengthwise. Scoop out the seeds and then cut the sliced jalapeños in half, horizontally.

Place about a teaspoon of the cream cheese filling in each jalapeño quarter. Take about 1/3 cup of the sausage and pat it into a 3-inch circle and place the stuffed jalapeño in the center of the sausage. Wrap the sausage around the stuffed jalapeño until it’s completely covered, and form into an egg shape.

Place sausage-wrapped jalapeños on the sheet, about an inch apart. Bake for 15-20 minutes, or until the sausage is cooked. For additional browning on top, you can place the sheet under the broiler for 2-5 minutes.

Serve with buttermilk dressing, queso or salsa.

Orlando Police–Harassment?

This post is about someone that says that the harassment by the Orlando police is out of control.  This really sounds like someone tht got stopped and has a bone to pick with the police.  Nevertheless, here is the idea that it might be happening   The post has a link back to that police department. 

My thoughts are that there may be times that I do not agree with authority but the respect is still there.  However, the fair treatment to fellow human beings is important and if the police are harassing the general public then that is wrong. 

That is why the story about police harassment in the Orlando area surprises me.  I have read the complete story about harassment and I do not know whether to believe it or not.  The story almost sounds contrite and conceived in someone’s mind.  Therefore, I think I do not believe it as written.

You can take a look at the Orlando Police department site at the link above and see what you think of them.  If you are in that area, check them out.   Are they the type that would harass someone for no reason or are they good and honest cops.

Turn out the Oven - for Global Warming.

Willy likes to cook but Willy had considered that he needs to turn out the stove to try to help with global warming.  However, Willy is really screwed up.  This Global warming made Willy think it was turning hotter and instead it seems to be getting cooler. 

Right now Arkansas has had record snow fall.  Willy is sitting in his house with the fire going and there is 8 inches of snow outside.  The temperature is cold and getting colder.  Willy wants things to heat up and people to get hot.  Hot folks come from global warming.  Where do the cold people go.  I just need something hot to come warm me up.

Where does global warming go from here.

How Important is your Credit Score?

Willy likes to cook but Willy’s real job is in providing credit to deserving people.  I doing that Willy stresses often to people how important it is to maintain a good credit score.  Just recently I had the opportunity to run a customers credit score about four months apart.  The first time the credit score was 733.  The second time I ran their credit score it had dropped to 673.  The only difference was that during that time frame the couple had taken out a new car loan and they had made the second payment over 30 days late.  That slight change in their credit history made them drop over 60 points.  This is important.
If you are needing to get a loan or do something that your Credit bureau score is important to then you should probably be aware of what that score is.  The question is how do you keep up with the things that affect your score.  Well, one of the things that many people do is to go online and get a free credit score.  This will allow you to know what the lender will know and be prepared to take on that task of getting an approval with the score that you know that you have.
So the point of it all is that your credit score is important and you need to do two things.  The first thing is to do everything that you can do to keep your score good and the second thing is to keep aware of what your score is.

Spaghetti is Cooking

Willy likes to cook but Mrs Willy is the cook in the family.  Tonights supper was her great Spaghetti and meat sauce.  She cooks hamburger meat, onions, seasoning mix, and noodles.

This always turns out better than any you can get anywhere.  Why is it so good.  She cooked it.

Tomorrow the leftovers are even better as all flavors meld together.

Blackeyed Peas and Christina

Willy forgot to mention in the early post today that he is cooking up a couple of things for the next Superbowl Sunday.  Yes, Willy believes that the country needs to start now to help improve the Superbowl.

Willy believes first that the country needs to cook up a good country singer to do the National Anthem.  They take less liberty with the melody and they usually get the lyrics right.  Maybe get Faith Hill Back.



The Next thing is to cook up a different mess of Blackeyed Peas. The effects and lighting was great - Fergie sucked.

That was a mess of cooking that they did. More like spoiled peas with too much gas overload.

Cooking with Willy may someday need to get listed.  By being listed Willy is thinking that it would mean getting into being prevalent in something like Local.com.  This site is something of a local search engine. However it is more than just an online local yellowpages. Yes, Local.com is more like a mix of the following sites - Citysearch.com, Yelp.com, Yellowpages.com, Superages.com.

It has partnered with all the above mentioned sites and it offers the value of letting users visit 1 site to view the contest from all these sites. While you are there you can find accurate driving directions, contact information and the operating hours.  You can also get the benefit of reviews from multiple sites -- essentially a 1 stop shop for finding local businesses and services. Willy Investigates First Trade.

The internet has become a tool that is important to many Americans. Willy uses the internet a lot to help him perfect his recipes and to find new and interesting ways to cook.  Cooking is important to Willy.  The internet is also one of the most used tools for purchasing stocks, for  information about stocks and trading and just simply for trading stocks and bonds.  Yes, the internet has become a great and very important tool for those who do Online Trading.

Willy not only cooks but Willy is one of those people using the internet for trading stocks.  Willy does use the internet portal for my Online Broker.  Willy has taken the step to use an online broker for one of my IRA Accounts.  That account is invested and implemented with my internet account.  Willy does not have a smartphone so Willy has not yet started using Mobile Trading.  However, Willy looks forward to the near future when Willy has that phone and has that ability. 

Willy likes to give information and it is apparent that Willy is trying to give the idea that there is a large amount of Stock Trading that is done online.
