Willy's Weekend Food.

Willy had an uneventful weekend.  Started Early with Friday off and Willy played 9 holes of golf and mowed the yard and did some odds and ends.   Friday afternoon Willy put on a Pork butt with Neely Rub on it.  Willy cooked it until late Friday night.  Put it in the fridge and Saturday morning Willy chopped it up real fine.

This was then sprinkled with a seasoning that was given to Willy by the Mean Pig in Cabot, Arkansas.  This tablespoon of seasoning mixed in a chopped pork butt makes all of the difference in taste.   Willy ate on this pork with some bbq sauce and coleslaw mixed in on Sunday evening.  This gets eaten with good Lays Potato Chips - Ruffles.  Great easy meal.

Saturday Willy ran around with wife, ate Chinese food for lunch and then snacked for Supper.  Sunday lunch was simple rotisserie chicken from Kroger, open can of pork and beans, and some deli potato salad.

Eating simple and making life easy is really great and that is what is Cooking with Willy

Coconut Catfish with Lime Sauce

Sometimes Willy sees a recipe that sounds real good and turns out ok but is not considered a keeper.  It may be that the recipe includes catfish which Willy loves.  However, Willy has tried catfish many ways but the only real way the Willy likes catfish is fried.  Good old Southern Fried Catfish.  It can't be beat.

Here is the recipe that Willy tried and would recommend if you like the coconut stuff - but Willy will not go to trouble again.  Here it is.

Take catfish fillets and dip in coconut milk and then roll in dried coconut flakes.  Wow - looks pretty.  Put on a pan and grill for 15 minutes at 350 degrees.

Make a sauce consisting of

juice of 3 limes
1/2 cup chicken stock
1/2 tsp salt
2 tbsp sugar
2 tbsp cornstarch.

Boil the first four ingredients and then add cornstarch to thicken as desired.

Drizzle the sauce lightly over the fish and eat.

Willy is cooking up an idea that says that everyone needs to enhance and protect eheir pickup truck cargo box with a bakflp truck bed cover.  What is this you ask?  Well the bakflip tonneau cover is a hard tonneau cover with a folding design. It comes in 4 models; Bakflip G2, Bakflip HD, bakflip f1and Bakflip CS.

Willy finds that this is available for most pickups and that bakflip offers truck owners security and head turning looks. The folding design makes it very easy to use, not to mention very practical. Installation is easy with the provided clamps and you are sure to increase your fuel mileage.

Good looks, better gas mileage and all the girls look at Willy's truck.

Willy's Fried Tater Cakes

Willy cooks simple things some time and messes them up. Last night Willy was going to fry a simple potato cake. Willy's mother used to cook them anytime there was left over mashed potatoes from Sunday's lunch. That meant just about every Monday there were Tater cakes on the table.

Willy's problem is that he left out the flour. Cakes fried more like scrambled eggs than cakes. Nothing to hold them together.

Here is how it is supposed to be done. 10-4 Willy

Willy's Fried Tater Cakes

2 c. leftover mashed potatoes
1 egg, beaten
1/4 c. flour

Stir beaten egg and flour into potatoes. Form into patties. Dip both sides into additional flour and brown in a little shortening. A good variation is to add some chopped or ground ham to the mixture. Makes 4-8 servings.

Poor Man's Lobster

Another great Recipe that Willy is going to try.  Check it out.

10-4  Willy.

2 lbs fish fillets cut into 2 inch squares (northern or walleye is best)
1 cup water
1 cup dry white wine
two bay leaves
one small onion sliced
6 lemon slices

Put everything except fish in a pan and heat until simmering, put fish in simmer for about 10 minutes. cool slightly and serve with melted garlic or lemon butter.
