Corn Pudding for Thanksgiving

Serves:
4 servings

Directions

Beat 4 ounces softened cream cheese, a 15-ounce can creamed corn, 3/4 cup thawed frozen corn, 1/2 cup cornmeal and 1/2 chopped onion. Stir in 2/3 cup milk, 3 tablespoons melted butter, 1 beaten egg, 1 tablespoon sugar, 1/2 cup shredded cheddar, and salt and pepper. Spread in a buttered 1-quart casserole dish and bake 50 minutes at 350 degrees. Let stand 10 minutes before serving.

Hillbilly Willy - Kickin Dirty Rice

Willy lives in Arkansas. If you did not know Arkansas is one of the leading states in Rice Production. If you live in Arkansas or China - Rice is a staple of your diet. Therefore Willy uses lots of recipes with Rice in it.

This recipe is Dirty Rice with a kick. Hope you enjoy. - 10-4 Willy


Ingredients:
1
pound ground beef (75% to 80% lean)
1
medium green bell pepper, chopped
1
package (5.7 to 8 ounces) Cajun-style dirty rice mix


Water, as needed
1
can (14-1/2 ounces) diced tomatoes, drained


Instructions:
1.
Brown ground beef with bell pepper in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into 3/4-inch crumbles. Pour off drippings.

Stir in rice mix and water amount indicated in package directions, omitting oil or margarine; bring to a boil. Reduce heat; cover and cook according to time indicated in package directions or until rice is tender.
3.
Stir in tomatoes. Cook until heated through, stirring occasionally.
Makes 4 servings.

Corn Casserole


Willy's house is thinking about holiday meals and Willy always puts in the request for good corn Casserole. The lovely Mrs Willy does a great job as well as Daughter Willy on this one. - Try it out. It is sometimes even better a day or two later and heated up under the broiler. A little crustiness on this is really good.


1 - 17 oz can Cream-style corn
1 - 17 oz can whole kernel corn - drained
1/2 cup of water
2 eggs - beaten
1 small box Jiffy cornmeal muffin mix
1/2 tsp sage
1/2 tsp salt
Dash Pepper
1 stick margarine - melted
1 - 8oz carton French Onion Dip

Mix all ingredients except muffin mix; Stir until well blended. Add muffin mix; blend well. Turn into a large,
lightly greased casserole dish and bake at 350 degrees for 50 minutes or until lightly browned.
