Cranberry Fudge

Willy's wife makes a lot of sweets during the Holidays. This year in her "lets try this one" category, she tried a Cranberry Fudge Recipe that a friend had given her. Needless to say everyone that tried it raved over the results. Here is the recipe.

2 Cups Sugar

1 stick butter

¾ cup sour cream

Boil above ingredients to a soft ball stage.

Add:

1 bag white chocolate Chips

1 small jar marshmallow cream

1 cup cut-up dried cranberries

1 ½ cup pecans

Mix Well

Pour in foil lined pan

Put in refrigerator till firm (at least 1 hour)

Cut and Serve.

Cocoons - Must Be Hillbilly

Willy is all about sweets and things that Willy doesn't need. A recipe that came to Willy's attention recently sounds really good and Willy believes that he needs to try this one real soon. Check this one out for some good eats.

1 stick Butter
2 T Powdered Sugar
1 tsp vanilla
1 C flour
1 C Pecans, Chopped

Cream butter, sugar, vanilla and flour (batter will be stiff) Add chopped pecans and make into balls. Place on greased cookie sheet. Bake in slow oven 45 to 60 minutes at 250 degrees, until light brown. While balls are warm, roll into powdered sugar.

Make up your own jokes.

Chocolate No BakeCookies

Willy made some great cookies last night for Willy and Mrs Willy. These are some of Willy's Favorite - Easy cookies. -- Also More on Cookies in another post or two.

These cookies consist basically of putting sugar, butter, cocoa and milk in a pan and boiling for 2 minutes. Then add peanut butter, oatmeal and vanilla. Mix and drop. - Great Cookies.

2 C Sugar
2 T Cocoa
1 Stick Margarine
1/2 C Milk
1/2 C Crunchy Peanut Butter
3 C Oatmeal
1 tsp vanilla

Willy actually cuts recipe in half.

Brickle

AT THIS TIME OF THE YEAR WILLY'S THOUGHTS TURN TO SWEETS AND CANDY. WILLY CAN HARDLY PASS UP ANY CANDY GOOD OR BAD. THIS IS SOME CANDY THE MRS WILLY MAKES EACH YEAR AROUND CHRISTMAS FOR PARTIES AND TO PUT IN DISHES TO GIVE AS GIFTS FROM HER KITCHEN. THIS STUFF IS REALLY GOOD AND HAS THE HILLBILLY WILLY SEAL OF APPROVAL.

Quantity Ingredient

1 Pkg White Almond Bark
2 Cups Rice Crispies
2 Cups Peanut Butter Captain Crunch
2 Cups Pecans - slightly toasted in oven

Melt Almond bark in Microwave in large bowl. Stir in Rice Crispies, Captain Crunch and Pecans. Line Jelly Roll pan with wax paper and spread thin layer of mixture in pan. Let set until hardened. Break up into pieces.

Note: Makes great Christmas candy by using the Christmas Rice Crispies which are red and white.
