Willy's Fried Tater Cakes

Willy cooks simple things some time and messes them up. Last night Willy was going to fry a simple potato cake. Willy's mother used to cook them anytime there was left over mashed potatoes from Sunday's lunch. That meant just about every Monday there were Tater cakes on the table.

Willy's problem is that he left out the flour. Cakes fried more like scrambled eggs than cakes. Nothing to hold them together.

Here is how it is supposed to be done. 10-4 Willy

Willy's Fried Tater Cakes

2 c. leftover mashed potatoes
1 egg, beaten
1/4 c. flour

Stir beaten egg and flour into potatoes. Form into patties. Dip both sides into additional flour and brown in a little shortening. A good variation is to add some chopped or ground ham to the mixture. Makes 4-8 servings.
