Coconut Catfish with Lime Sauce

Sometimes Willy sees a recipe that sounds real good and turns out ok but is not considered a keeper.  It may be that the recipe includes catfish which Willy loves.  However, Willy has tried catfish many ways but the only real way the Willy likes catfish is fried.  Good old Southern Fried Catfish.  It can't be beat.

Here is the recipe that Willy tried and would recommend if you like the coconut stuff - but Willy will not go to trouble again.  Here it is.

Take catfish fillets and dip in coconut milk and then roll in dried coconut flakes.  Wow - looks pretty.  Put on a pan and grill for 15 minutes at 350 degrees.

Make a sauce consisting of

juice of 3 limes
1/2 cup chicken stock
1/2 tsp salt
2 tbsp sugar
2 tbsp cornstarch.

Boil the first four ingredients and then add cornstarch to thicken as desired.

Drizzle the sauce lightly over the fish and eat.
