Fried Cabbage Texas Style


Ingredients:
1--head cabbage, thinly sliced
1--teaspoon sugar
6--slices bacon (I just used bacon grease, because I thinly sliced ham into mine)
5--tablespoons corn bread mix
1--small onion, chopped
3--cloves garlic, chopped
2--fresh jalapenos chopped (you can take out the seeds, I didn't)

Directions:
Put shredded cabbage into large bowl, and sprinkle sugar over it. This will remove the excess water from the cabbage. Cook bacon in a large skillet, until browned. Drain and crumble, and set aside. Reserve grease in skillet.Sprinkle cornbread mix over cabbage and mix thorougly, coating cabbage. Saute onions, garlic, jalapeno peppers and ham in skillet. Add cabbage, and saute until it starts to cook down, then add about a cup of water, put a lid on it and let it cook and finish wilting down. You can then sprinkle the bacon over the top and serve. I didn't do the bacon. Instead, I just used a couple of large tablespoons of bacon grease to saute everything in, and added thinly sliced ham to saute into it. You can just use the bacon sprinkled over the top if you want to. You can cut down on the jalapenos if you think that it will be too spicy. Also, taking out the seeds will make it less spicy.
