Then Willy came across the franchising opportunity with Mrs Fields Cookies. Willy has had Mrs. Fields Cookies and there are none better. So Willy asked himself "Why try to create something that someone has already done so well." Cocoons - Must Be Hillbilly
1 stick Butter
2 T Powdered Sugar
1 tsp vanilla
1 C flour
1 C Pecans, Chopped
Cream butter, sugar, vanilla and flour (batter will be stiff) Add chopped pecans and make into balls. Place on greased cookie sheet. Bake in slow oven 45 to 60 minutes at 250 degrees, until light brown. While balls are warm, roll into powdered sugar.

Willy Cooking up Some Houston Rodeo!
Willy has been there done that and wants to go again. One of the things that Willy finds that is unique to the Houston Rodeo is that it is not only a thrilled eventful rodeo but it has great concerts following the rodeo giving such great stars such as some of the previous year’s performers which has included acts such as George Strait, Miley Cyrus, Hanah Montana, the Jonas Brothers, Bon Jovi, Toby Keith, Maroon 5, Brooks & Dunn, Alan Jackson, Beyonce, Maze, Tim McGraw, Faith Hill and ZZ Top. This year look for Alan Jackson, Derks Bentley, Kenny Chesney, Daurius Rucker and many more.
Another unique thing is the very prized seats which are the coveted Action Seats. These seats which are along both sides of the rodeo ring and comprise the first seven rows of sections 103-110 and 123-130. Action Seat tickets include complimentary food and beverages, with alcohol available for purchase. With these tickets you can believe Willy that you will be cooking up some action and seeing it bright and clear.

Chocolate No BakeCookies
These cookies consist basically of putting sugar, butter, cocoa and milk in a pan and boiling for 2 minutes. Then add peanut butter, oatmeal and vanilla. Mix and drop. - Great Cookies.
2 C Sugar
2 T Cocoa
1 Stick Margarine
1/2 C Milk
1/2 C Crunchy Peanut Butter
3 C Oatmeal
1 tsp vanilla
Willy actually cuts recipe in half.

Chicken Questions
Question: When we smoke cut up chickens! Do we follow the same recipe and method as awhole chicken?
Answer: Cut up chickens will take slightly less time than a whole chicken in most cases. Chicken quarters which is basically the leg and thigh attached together is great to smoke. These will require about 3.5 to 4 hours at 225-240 degrees.
You can sometimes smoke them a little hotter (250-275 or more) to crisp up the skin. This speeds up the cook time considerably and in Willy's opinion does not affect the quality of the end product.

Valentine's Day - A time to Say "I Love You"
Willy is trying to cook up something for Valentine's Day. That has several thoughts to Willy. Sure one is what can Willy cook for Mrs Willy that will be the greatest thing for Valentine's Day. You see Willy and the Ms. have been doing Valentine's Day for over 30 years now and ever year or two Willy tries to think of doing something different.
Well, Willy is thinking this year he might go retro...back to something Willy done in the early days of marriage but this time give it a little twist. Willy is thinking of baking a Heart Cake for Valentine's day and making a romantic dinner. The twist would be that Willy would plant in the cake a great gift of a casio g-shock watch.

Hillbilly Willy - Kickin Dirty Rice
This recipe is Dirty Rice with a kick. Hope you enjoy. - 10-4 Willy
Ingredients: | ||
1 | pound ground beef (75% to 80% lean) | |
1 | medium green bell pepper, chopped | |
1 | package (5.7 to 8 ounces) Cajun-style dirty rice mix | |
Water, as needed | ||
1 | can (14-1/2 ounces) diced tomatoes, drained | |
Instructions: | ||
1. | Brown ground beef with bell pepper in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into 3/4-inch crumbles. Pour off drippings. | |
2. | Stir in rice mix and water amount indicated in package directions, omitting oil or margarine; bring to a boil. Reduce heat; cover and cook according to time indicated in package directions or until rice is tender. | |
3. | Stir in tomatoes. Cook until heated through, stirring occasionally. | |

National Finals Rodeo is What's Cooking
You bet ya- that would be a good trip. Willy has never been to the National Finals Rodeo but Willy is a big Rodeo fan, Bull riding fan and a fan of about any of the sports where it is man vs beast.
Willy has even tried to be a photographer at a small rodeo but found when the bulls were coming out of the shoot and Willy was in the middle of the arena with his eyes focused in his camera, the bulls looked to big. Willy fell down and the clown had to save him.
Well, that is certainly what willy would do if he had tickets to National Finals Rodeo Las Vegas NV
Willy would want to make the bull riding. Willy likes to see the big monster bulls and the fact that it is tough to ride them. Willy wants to see the bare back bronc riding from close up. That is why willy would want to make sure that he had great tickets.

Cajun Squirrel Stew
The Stew might be a little spicy for some of you non-redneck squirrel hunters, but if it is you can just wait around and Willy will tell you how to cook Squirrel Brains - a Delicacy in the Hills of Arkansas
Cajun Squirrel Stew
Ingredients
Squirrels - cut into serving pieces, amount depends on how many you can eat
olive oil
1 large onion
1 large green bell pepper
2 cloves garlic~
Cajun spice (Tony Chachere's recommended)
2 tbsp Tabasco sauce
4 tbsp ketchup
1 tbsp Gumbo File seasoning
cooked rice
Instructions
In a deep pot or dutch oven, heat some olive oil.
Season the squirrel on all sides with the Cajun seasoning.
Add to the hot oil and turn to brown on all sides. Continue to cook until done.
Place the onion, bell pepper and garlic in a blender. Cover with water and chop. Add to the pot when squirrel is done.
Sprinkle the added vegetables with Cajun seasoning.
Add the Tabasco sauce, ketchup and the Gumbo File.
Stir to mix well.
Serve over the cooked rice.
Enjoy.

Buffalo Chicken Salad
Willy likes to browse the different sites to see what is cooking. Willy happened upon this recipe on the Food Network site. Buffalo Chicken Salad
Willy thinks this recipe would be real good as long as the Buffalo meat is not too tough. Also, Willy is not a blue cheese fan so Willy might want to try some other type of dressing.
But - might be something that the fans of Willy's Cooking would like to try.

Sassy Potato Corn Chowder - Willy Likes!
With that in mind Willy is always looking for recipes of chowders that he likes and came across this one from the Kraft Kitchens. Try this one - Willy thinks you will like.

6 servings
What You Need!
4 slices OSCAR MAYER Bacon, chopped
1 can (14 oz.) fat-free reduced-sodium chicken broth
1-1/4 lb. baking potatoes (about 3), peeled, cubed
1 pkg. (10 oz.) frozen corn, thawed, drained
2 stalks celery, sliced
1/2 cup chopped onions
1/2 cup MIRACLE WHIP Light Dressing
2 Tbsp. flour
2 cups milk
Make It!
COOK bacon in large saucepan until crisp. Remove bacon from pan; drain on paper towels. Discard drippings from pan.
ADD broth and vegetables to saucepan. Bring to boil; simmer on low heat 15 min. or until potatoes are tender.
MIX dressing and flour in medium bowl. Stir in milk. Add to potato mixture; cook 3 to 5 min. or until heated through, stirring constantly.

The Recipe - Hillbilly Punch
This recipe is a favorite punch recipe. The name comes from the Beverly Hillbillies where Granny would always offer her "Recipe" for special occasions.
This is the recipe but does add some ingredients that should not be used at a church social.
If you don't like this punch with a punch- Just drink the rum!

Original recipe yield: 1 serving.
Prep Time: 2 Minutes
Ready In: 2 Minutes
Servings:1
INGREDIENTS:
4 cups ice cubes
1 fluid ounce white rum
1 fluid ounce peach schnapps
1 fluid ounce amaretto liqueur
1 1/2 cups cranberry juice cocktail, chilled
1 cup lemon-lime flavored carbonated beverage, chilled
DIRECTIONS:
Fill a (1 quart) canning jar with ice. Measure in rum, peach schnapps and amaretto liqueur. Pour in cranberry juice until glass is 3/4 full. Fill with lemon-lime soda.
Drink and Be Happy!

Pork Loin With Cranberry Sauce Topping.
Recipe:
1 Pork loin or tenderloin - you choose
1 can of Cranberry Sauce
1/2 cup of brown sugar
1/2 cup of coke.
Take loin and place in a cooking dish - fat side up.
pat with brown sugar
spread cranberry suace over the entire loin.
Cover and cook at 350 degrees until internal temperature is about 170 degrees.
Remove - slice and enjoy.
Turned out delicious.

Spice It Up With Willy and Pendery's!
So where would you go to get good spices? Well Willy has found a new place that Willy is going to try out. The place is called Pendery's World of Chile and Spices.
This site seems to have all the spices that Willy might need for his famous Hillbilly Willy Chili and all of the other dishes that you find on Willy's site.
While looking at the various spices on this site Willy noticed one that he was not familiar with. This was hungarian paprika . Willy is familiar with regular Paprika but not Hungarian. They call it the zippiest of Paprika's. Well, Willy uses paprika in many of his dishes and now it sounds like maybe Willy needs to take this paprika and try it out to see if it really does add that zip to the dish. It may be that it is just that last little push that Willy needs to take his Hillbilly Chili for really good to great status.
Check back here to see if Willy makes any changes to any of his already good recipes with Pendery's spices to make them the best in the hills.
