Poor Man's Lobster

Another great Recipe that Willy is going to try.  Check it out.

10-4  Willy.

2 lbs fish fillets cut into 2 inch squares (northern or walleye is best)
1 cup water
1 cup dry white wine
two bay leaves
one small onion sliced
6 lemon slices

Put everything except fish in a pan and heat until simmering, put fish in simmer for about 10 minutes. cool slightly and serve with melted garlic or lemon butter.

Onion pork chops

Willy likes pork chops and Willy likes onions. So why not combine the two.

Willy likes to take thin cut pork chops and cover them with honey mustard. Willy then takes finely mashed up canned onion flakes and shakes them on the pork chops to cover completely.

Willy then cooks at 350 for about 45 minutes. Combine this with some kernel corn and some brown rice.

Great food.

Fish on a Plank


Willy likes grilled fish but Willy is not always good at grilling fish. Tonight Willy grilled two pieces of Halibut on his grill. It turned out awesome.

Willy started out by soaking two cedar planks for over an hour. While the wood was soaking Willy soaked the fish in Milk to take out the strong fish taste.

Next step was heat grill to about 400 degrees. While the grill was heating I sprinkled the fish with seasoned salt and with chopped parsely.

Willy then put the fish on the planks and placed it on the grill for about 20 minutes.

Served with brown rice and broccoli.

Easy Chicken Stir-Fry Skillet

Willy is trying to cook healthy and in looking for healthy recipes Willy found this Stir Fry. Chinese food and healthy - Willy thinks this is a good idea. Willy credits this recipe to Kraft Kitchens -10-4 Willy

What You Need!
2 tsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
3 cups frozen stir-fry vegetables, thawed
1/4 cup KRAFT GOOD SEASONS Asian Sesame with Ginger Dressing
2 Tbsp. soy sauce
1 Tbsp. honey
1/4 cup chopped PLANTERS COCKTAIL Peanuts
4 cups hot cooked instant white rice
Make It!

HEAT oil in large skillet on medium-high heat. Add chicken; cook and stir 7 min. or until no longer pink.

ADD vegetables, dressing, soy sauce and honey; mix well. Cook an additional 2 min. or until heated through. Sprinkle with peanuts.

SERVE over the rice.

Sandwich time with Willy

Willy loves a good sandwich. A good sandwich starts with a good bread. Willy likes a honey berry wheat bread. You know bread with those crunchy little seeds in it.

Well, then you can take something easy like Petit Jean Bologna or Petit Jean Ham. To me that is premium ham and bologna. Then I like to take Miracle Whip. Many people like mayonnaise but I like Miracle Whip.

The sandwich can then take on a good sweet tomato and a little bit of vidalia onion. If spring is here then what I like to do is take the bread, Miracle Whip and just add a couple of thick slices of a great tomato.

Very good.

Family goes out of their way to do things like make airport runs and get you where you need to be.

Internet in your neck of the woods!


Willy knows about cooking and Willy knows that he gets lots of information from the internet. What Willy did not know was that there were companies out there like wildblue internet who is an internet provider for people who live in rural/remote locations. They believe that just because you live out in the country doesn't mean you should have to have a slow dial-up internet connection!

That is what Willy is talking about. Willy likes to download videos of cooking and politics and lots of good stuff along with recipes and ideas that might show up as interesting. Willy knows what it is like to have slow dial up internet. Willy had it one time. Willy was not a happy camper.

Willy wishes that there had been wildblue internet in his life at that time. Willy was trying to build a website with lots of pictures and Willy could set some pictures to upload and go cook supper, because that is what Willy does, and then come back and the pictures would just be finishing.

Tangy Lime Grilled Top Round Steak


Willy is a steak lover and Willy likes this steak. Check it out.

Marinade time: 6 hours or overnight

Ingredients

  1. 1 beef top round steak, cut 3/4 inch thick (about 1 pound)
  2. 1/4 cup fresh lime juice
  3. 2 tablespoons brown sugar
  4. 2 tablespoons vegetable oil
  5. 1 tablespoon Worcestershire sauce
  6. 3 large cloves garlic, crushed

Instructions


  1. Combine lime juice, sugar, oil, Worcestershire and garlic in small bowl. Place beef steak and lime mixture in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or overnight; turning occasionally.
  2. Remove steak from marinade; discard marinade. Place steak on grid over medium, ash-covered coals. Grill, uncovered, 8 to 9 minutes for medium rare (145°F) doneness, turning occasionally. (Do not overcook.)
  3. Carve steak into thin slices. Season with salt and pepper, as desired.

Gold!


Did you ever want to buy gold? Did you ever want to sell gold? Did you ever want to do something and you were not sure what or how to do it? Willy ain't talking about Idaho Gold Potatoes here. Willy is talking about real gold.

Well, Willy has bought and sold gold and Willy has cooked Idaho Gold potatoes. Willy finds that he is better under his own expertise to cook the gold potatoes. Willy did not do as good buying and selling gold on his own. That is why Willy wishes he had known about Goldline.com

Butter Way Rolls.

Willy loves his rolls and or biscuits. Nothing compliments a good southern meal better than some good ole rolls. Willy was given this recipe by a great grand lady who could really cook.

Here are some of the best rolls you can get..

1-1/2 cup warm water
2 pkg dry yeast
4 cups flour
1/4 cup Sugar
1-1/2 tsp salt
1/3 cup shortening
1 egg

Pour warm water in hot a mixing bowl and add yeast. Stir until dissolved. Add half the flour, all the sugar, salt, shortening & egg. Start mixer on medium speed and beat until smooth - about 2 minutes. Add rest of flour and stir in by hand and beat 2 minutes. Cover with damp towel and let rise about 30 minutes. Grease muffin tins - use Pam. Stir down batter in 20 to 25 strokes. Spoon into pans filling hafl full. Let rise in warm place until batter reaches top of pan. About 20 to 30 minutes. Bake at 375 degrees for 10 - 15 minutes.

Yield: 24 rolls

2010 Homebuyer Tax Credits - Willy needs this!

Willy needs to know if you are familiar with the newest version of the housing stimulus ? If you are not Willy believes you need to know as much about it as you can. Yes, you may have heard about it last year but did you know it has been extended and amplified.

What do you mean amplified. Well, now even more people are eligible making a great deal in real estate get even better. Some of the facts are as follows:

  • First-time homebuyers, or those who have not owned in the last three years, can receive up to an $8,000 tax credit
  • Homeowners who have lived in a current home consecutively for 5 of the past 8 years can receive up to a $6,500 tax credit
  • There may be no future extensions, so all qualified homebuyers are urged to act and have a written, binding contract by April 30, 2010 (close by June 30, 2010)
  • Income limits are now $125,000 for singles, $225,000 for married couples with a $20,000 phase-out of the credit for both.
So Willy is cooking up the idea that everyone that is thinking about buying a house can't afford to pass this up. Now is the time and now is the place to get after finding that right home and getting the government to give you back a chunk of change when you buy. That can't be beat.

Willy's Vanilla-Almond Fruit Tart with Kiwi

Willy likes to cook up something a little fancy every now and then. This little recipe caught Willy's eye. See if you might like it.

What You Need!
1/2 cup PLANTERS Sliced Almonds, toasted, divided
50 NILLA Wafers, finely crushed (about 1-3/4 cups)
6 Tbsp. butter, melted
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
1 cup thawed COOL WHIP Whipped Topping
1 cup mixed fresh fruit (blueberries, raspberries, blackberries, halved strawberries, sliced kiwi)

Eco Mattress Store - and Good Cooking!

Nothing like Willy wanting to put in a good day of cooking or grilling and being to tired to get the job done. Willy has decided that being too tired is something that Willy does not want especially if it can be helped by something as simple as a better mattress.

Yes, you heard Willy right. Willy is not talking about organic food today but Willy is talking about Organic Mattresses and where can Willy get something like that at? Willy can get Eco Friendly Mattresses at the Eco Mattress Store.

How cool is that? Willy could get him one of those mattresses and would probably sleep like the guy in the picture is sleeping? Willy would jump up the next morning ready to cook like only Willy can cook.

Willy loves Home Made Tortillas


Local Mexican "Mom & Pop" restaurant makes their own tortillas. The only one that Willy knows of in the local town. Willy likes to eat fajitas or anything they make in the home made tortillas.

Fabys is the name of the restaurant.

Willy likes to pick some up on Friday evening, heat them in microwave for about 20 seconds on Saturday morning and put eggs and sausage in the home made tortillas.

Willy's mouth is watering.

Willy Needs to See Clearly to Cook

Willy sometimes struggles with his eyesight. Some days it is really good and others it is really bad. Willy has glasses but Willy lost them. Willy knows that he needs to get his eyeglasses fixed but Willy just does not want to take the time to get the eye test and all that goes with it along with spending so much time trying on all of those eyeglasses.

Well Willy has found out through an article about how to find inexpensive eyeglasses at Zenni Optical that Willy can get his eyes tested and then go online to Zenni Optical and give them his prescription and get his eyeglasses at a much cheaper cost.

Can you believe that! Pay less and get the same glasses that you would other places and with a great selection to boot. Willy is really feeling good about this because Willy has to go to the eye doctor at the end of the month. As soon as willy gets the old eyes checked, Willy may just ask for the prescription and go right home and go online and look at all of those glasses. Willy will get some real nice glasses for less than the optical store.

That is a good thing and Willy knows it.

Cooking up some Gold

The United States Hockey team were trying to cook up some gold today similar to how the bobsled team did yesterday.

Maybe the difference was that the Hockey team did not have to wear those tight outfits that the Bobsled Team wore.

Willy looks a good as a couple of the guys on the bobsled team. However, if Willy got that outfit on Willy would never get out of it.

Cranberry Fudge

Willy's wife makes a lot of sweets during the Holidays. This year in her "lets try this one" category, she tried a Cranberry Fudge Recipe that a friend had given her. Needless to say everyone that tried it raved over the results. Here is the recipe.

------------

2 Cups Sugar

1 stick butter

¾ cup sour cream

Boil above ingredients to a soft ball stage.

Add:

1 bag white chocolate Chips

1 small jar marshmallow cream

1 cup cut-up dried cranberries

1 ½ cup pecans

Mix Well

Pour in foil lined pan

Put in refrigerator till firm (at least 1 hour)

Cut and Serve.

Gold is What's Cooking today.

Willy says that Gold is cooking because Gold is hot right now. Willy knows hot when Willy sees hot and knows that it takes experts to know when buying gold is a good idea and when buying gold is a bad idea.
